About Allan

Allan visiting Glencoe, Scotland

I was born in Scotland and served my chef's apprenticeship under Chef Jean Maurice Cottet in the prestigious Central Hotel, Glasgow, Scotland.

I have been fortunate to train and work in some of the other Michelin Guide starred restaurants in Britain including Poole Court and Gravetye Manor.

Since coming to Canada, I have worked with Cathay Pacific Airlines, been Executive Chef at the Royal Ontario Museum, traveled extensively with Marriott Corporation of Canada and more.

I am an extremely well trained and versatile chef and pastry chef with over twenty years of experience in the food service industry. I love modern, trendy, fusion cuisine, experimenting with the textures and flavours of food, using only the best ingredients.

I now live in Kingston, Ontario. In addition to being a Cake Artisan and a Culinary Artisan, I am also teaching bakery part time at St. Lawrence College and holding cooking classes at various venues.
